Balsamic Baked Tilapia

This ended up being yummy and awesome looking. This was my moms plate and yes she had a ton of butter. I guess she thought that would be for good looks for a pic and she ate it that way too! My mom made the mashed taters and the mac n cheese. I told her to pick the sides and this is what she did! I thought for sure she would have made some green beans or corn or something but no she whipped up some fake taters and mac n cheese.



Oh yes I was proud of this! Those that know me well know that this was a big accomplishment for me! I just wish I would have taken a pic of my poached chicken the other night.

Here is the recipe if you want to try it. I was actually surprised that it didn't taste real fishy. I hate it when they taste real fishy. Also the bell peppers and onions gave it that nice sweet flavor.

Balsamic Baked Tilapia

* 1 tablespoon olive oil
* 1 yellow onion, halved and sliced
* 1 red bell pepper, chopped
* 2 tablespoons balsamic vinegar
* salt and pepper to taste
* 2 (8 ounce) fillets tilapia fillets
* 2 tablespoons olive oil
* 1 cup crumbled cheese ( I used Feta)
* 4 cups mixed salad greens

DIRECTIONS

1. Preheat an oven to 350 degrees F (175 degrees C).
2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook onion and red pepper in the oil until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Stir balsamic vinegar into the vegetables; season with salt and pepper.
3. Rub tilapia fillets with 2 tablespoons olive oil and a sprinkle of salt and pepper. Place fillets in a small baking dish, and top with the balsamic onion mixture. Sprinkle fish evenly with cheese.
4. Bake in preheated oven until fish flakes easily approx. 30 min. Serve atop salad greens
